Today I wanted to share with you a recipe that I made a lot over the holidays. I adapted it from Elana’s Pantry, which is a great resource for baking all sorts of gluten-free delights.
Paleo Banana Bread
3 bananas, mashed
3 eggs, lightly beaten
1 tablespoon vanilla extract
1 tablespoon raw honey
1/4 cup coconut oil
2 cups blanched almond flour (please note, unblanched almond flour does NOT work in this recipe.)
1/2 teaspoon sea salt
1 teaspoon baking soda
1/4 cup dairy free chocolate chips/chunks (I like Mega Chunks)
Preheat oven to 350F.
Place bananas, eggs, vanilla, honey, and coconut oil in a food processor.
Pulse ingredients together
Add in almond flour, salt and baking soda, and pulse until blended.
Scoop batter into a greased loaf pan.
Bake for 55-65 minutes.
Remove from oven and allow to cool
